Vendors are trained on the different yam varieties and their suitability for boiling, pounding, frying, etc, and whether they are fit for purpose at harvest or sometimes during the storage cycle.
They are introduced to technologies such as roasting, slicing, and pounding equipment that would serve them better by reducing the drudgery associated with their services to the public. We expose our members in this category to nutrition, storage, preservation and food safety issues.
